Healthy Lunch on a Budget

I went to Sprouts on Saturday and decided to get something for healthy but budget friendly for lunch so I’m going to share the details.

I love zucchini noodles. I eat a lot of pasta so when I want pasta without the carbs I usually do frozen zucchini noodles or I buy the fresh ones I really should just buy a spiralizer and make my own. Since there was salt already added to these noodles I just added crushed red pepper and basil.

This is the first time I’ve had this pasta sauce and it’s so good. I like spicy food and I needed new pasta sauce because I had bought some regular marinara sauce from Publix a week ago didn’t check the label and there was milk in it. At some point I’d like to also make my own pasta sauces too.

I’ve bought the regular naan sprouts brand plenty of times but wanted to try the garlic and I’m glad I did it was really good it had a earthy flavor to it. I’m really in love with bread and have been trying to cut back on how much I eat but with a low calorie meal like this I knew I needed something to fill me so I wouldn’t be hungry in 30 minutes it’s all about balance.

I had saved my receipt so I could take a photo of it and upload it so y’all could see how affordable this meal was but of course my daughter likes to play with the pouch I keep all my receipts in and when I found it in her play kitchen open the sprouts receipt was nowhere to be found.

Everything I used in this lunch was the Sprouts brand.

And the noodles had a nice texture they look mushy but they weren’t they still had some bite and crunch to them. After I finished my bowel I wanted to eat it all over again and that’s how I know when I really like a meal.

Quick post. I ate out way more than usual this weekend cause it was Sage’s 3rd birthday. So, I’m about to highlight some good vegan food I ate.

First place was Big Chow Grill (Chow baby to me cause I’ve been going there so long and they changed the name a couple years ago)

I ordered veggie eggs rolls for Sage who used to eat them but I guess she’s decided she doesn’t like them anymore and she of course didn’t want them. If you’ve never been to this place you basically get up and walk down an aisle of veggies, proteins, sauces, and spices and get to put whatever you want in a bowel and they stir fry it then bring it to the table. I had put in my bowel brown rice, bamboo shoots, broccoli, tofu, basil, onions, red and green bell peppers, spinach, garlic, green curry sauce, peanuts, sesame seeds, Kung pao sauce, salt n pepper, and some other spices and sauces I can’t remember.

I made a mistake with my bowel cause I thought a blue stick was for vegetarian but it was for soup! And the veggie broth was honestly not it. I could’ve gotten up and just remade a bowel but I was full from a late breakfast and eating a egg roll. The two sauces from the egg rolls were vegan one was like a mildly spicy sweet and sour sauce the other one was a coconut creamed wasabi sauce which was so spicy the first egg roll I had I dunked it in the wasabi sauce and thought I was going to cry from the heat. But the food there is bomb and I usually enjoy it.

Next place is one of my favorites for an everyone can eat here place. None of my family is vegan so usually when we go out to eat I’m the odd one out. I would love to just go to all the vegan places and eat but I can’t cause no one else would eat anything cause they like meat.

Anyways, this was from Yardhouse. I had the buffalo cauliflower for an appetizer it was okay I’ve had better but it was crispy. And then I had the gardien wings with Korean sauce which is my favorite it’s spicy and crunchy but the inside is soft. The sauce def was vegan I didn’t even try it. I love spicy food so I don’t need a cooling sauce but next time maybe I’ll just bring vegan ranch with me. And I got a side of broccoli and just asked them not to cook it in butter.

I also ate other things this weekend just not out at restaurants and forgot to take pictures. On Sunday I had hash browns for breakfast and then for dinner (I didn’t have lunch cause I was at work) I had chickpea “tuna” salad and sautéd garlic kale.

That was my weekend of food I might do posts like this more often when I go out to eat which like I said is kinda rare but it happens at least once a month. So hope you guys enjoyed looking at this food as much as I enjoyed eating it!

Can’t wait to actually go to a vegan restaurant maybe I’ll go to one next month with one of my friends who is also vegan.

Pulled Jackfruit

I made pulled jackfruit for Christmas dinner and it was bomb. I have had jackfruit before at Bahama Breeze which if you don’t know it’s a seafood restaurant. I had jackfruit tacos and they were underwhelming to say the least. Under-seasoned, no texture, nothing. Plus the jackfruit had a weird sweet tasting aftertaste that I wasn’t a fan of. Huge miss. But I decided not to completely be done with jackfruit and so I got a can from Whole Foods and decided to make pulled jackfruit for my meal with greens, squash /zucchini and vegan cornbread.

I was going to do roasted rainbow carrots but I was at work while the grocery shopping happened and they were forgotten. But the pulled jackfruit was so good and I got it crispy and juicy.

1 can of jackfruit

Olive oil

Pepper

Pepper flakes

Salt

Garlic

Paprika

Brown sugar

Water

Barbecue sauce of choice

All in a pan shred the jackfruit with a fork and add all the ingredients. Let it simmer on medium and get the water to cook off then move the heat to low and smooth the jackfruit out in the pan so that some bits can get crispy. I like runny barbecue sauce so I already knew I was going to smother the jackfruit in this thin sauce. And eat it with pickles since I was eating cornbread I didn’t put it on a bun just had it as the “meat” of my plate.

So, even if you’ve tried something you thought was nasty try cooking it at home and see if you feel the same way. Most of the time it’s really not the food it’s how it’s cooked.

Impossible Burger

I tried the impossible burger at bareburger in Atlanta on Friday and it was everything and then some. Before becoming vegan I was definitely a burger girl. I craved them like people crave soda. I had tried the beyond burger but had yet to try the famous impassible burger. And let me just tell you if you’re a vegan and holding back from trying it you’re missing out.

I’ve heard people say it’s too meaty. Too meat texture like. And I know it’s testing methods are controversial in the vegan community. But I’m all for the greater good if vegan innovators can get more meat eaters to try vegan foods I’m for it.

The burger did taste like a real burger or from what I remember the texture was real burger like. It was good. It was juicy. I liked the texture. I liked the flavor. I did the build your own burger at Bareburger and got 1 impossible patty, a brioche bun (which wasn’t vegan cause they were hot of sprouted buns and I wanted my first impossible burger experience to be with a bun) vegan cheese, vegan mayo, sweet pickles, organic ketchup, mustard, lettuce, and guacamole. It was divine. I don’t really know how to explain the flavor besides it tasted like a burger would taste – the one thing that kept me from freaking out about how burger like it was – was that the patty didn’t hold together as well as a burger patty. It did fall apart at the end with all my toppings and burger falling out the bun but it was messy in a fun way.

Bareburger is a rather new place in Atlanta and it was cute I liked the decor. It was like hip with bears in suits paintings on the walls.

My daughter got a “cubby” meal which for her was a grilled cheese, fries, apple slices and a fruit punch juice box. She loved it. I didn’t think she would like the sweet potato, kale, and wild rice patty which was the other non meat option for kid meals. My daughter is still picky and won’t eat veggies so I went with what I knew she would eat. I’m always iffy about if I should get a 2 year old an almost $10 meal and tbh if we go back to Bareburger I’ll probably just get her fries and maybe bring her a grilled cheese from home (lol). Bareburger also offers vegan milkshakes and I tried the velvis which was coconut ice cream, banana, peanut butter, chocolate sauce, and hemp milk. It was so good. Creamy but not too sweet and the perfect ending to my impossible burger.

The one downside to Bareburger was the small quantity of fries honestly Sage got maybe 7 fries with her meal and I had a tiny rectangular tray of them. But I guess if we wanted more we could’ve ordered more. Other than that I did like Bareburger and I loved the impossible burger and will definitely eat it again. I’ve seen on their Instagram that their patties should be in stores come 2019 which I’m all here for so I can just enjoy them at home.

Doing something a little different for this post. I recorded a video because I’ve been wanting to start doing some video things. It’s not at all professional I shot it on my iPhone 8 and then edited it in iMovie I don’t have any editing software but if I like this whole video thing I’ll invest in a camera and software.

So, this is a video and rough recipe of a salad I’ve been doing lately for lunch/dinner.

First blot your tofu then cut it into chunks or squares.

Season them how you want. I was doing an Asian inspired salad so I used ginger, coconut aminos, salt, pepper, red pepper flakes, and siracha. You can see in the video I don’t use measurements it was too hard with one hand. And then I baked them at 400 degrees for 35 minutes to get them crispy on the outside.

The salad was a mix I bought from Publix with cabbage, cut brussel sprouts, and kale and I added chopped carrots.

Finished tofu. If you’re baking tofu and not using oil like me I recommend using parchment paper and not foil it gets the tofu crispy on the outside but soft on the inside like a really good french fry.

And added siracha, follow your heart vegan Caesar dressing and walnut “cheese”.

This is a really filling salad and I know I won’t be hungry again until way later and will probably have a banana smoothie.

edit- I ate this around 1pm yesterday and I ended-up eating another salad later in the evening but used lettuce (I know) and today I feel so sick. I threw the bag away already. While I was eating something told me to stop because the lettuce wasn’t crunchy at all and I had a bad feeling about buying lettuce when I bought it (should’ve listened to instinct). So, I hope y’all are all staying safe with your greens right now and not taking your body or health for granted.

Friendsgiving 2018

Friendships are important. Some might even say more important than family. Friendships are people that you choose, you share with, you trust. And what better way to celebrate friendships than having a Friendsgiving chilling with your friends, eating, and showing them how much you appreciate them. Thanksgiving is about giving thanks. Bring grateful. Being appreciative. And just like we are grateful for family we should also be grateful for friendships. Since last year my closest friend has been hosting a vegan Friendsgiving at her house. Last year I brought Sage to the Friendsgiving and oddly I have no pictures from it – but this year I just wanted to hang out with my friends and have a rare but needed time off from mom duties.

I bought a vegan cherry pie from Whole Foods because I had to work all weekend and was being lazy and didn’t want to bake/cook anything. It was really good but next year I’ll probably suck it up and just make something because it was $15. There was vegan or seitan fried “chicken” cheesy vegan scalloped potato’s, vegan macaroni and cheese, and a cucumber- onion-tomato salad. I’ve had cashew cheese macaroni before and it was so rich and filling but so good. I may never do macaroni another way now. And the cucumber salad was very needed because everything else was heavy.

We played uno and jenga. My friends boyfriend has a studio in their house where he makes beats and we attempted (and I use this loosely) to make a beat. We watched big mouth, drank wine. And talked.

I ate my leftovers Sunday morning before I went to work and they were even better than I remembered! I left the macaroni for Sage to eat so hopefully she likes it as much as I did cause that’s how I’ll be making it from now on.

I’m an anti social person I like my me time and my own space more than others. I also can feed off others energy really easily and I get anxiety / stress from situations that can go “bad”. The people I do like to engage with I love them. They are very close and very important to me so Friendsgiving is easily one of my favorite social outings of the year. I like eating, drinking, and being with my friends.

If you’re like me and most of your family lives in a different state or if you have to work on thanksgiving having a Friendsgiving another day than on the actual holiday can allow you to experience the feeling of thanksgiving and celebrate. Everyone needs someone get in the spirit of celebrating who is there and shows up for you.

If you don’t have a Friendsgiving tradition I say start one! Even this year it’s not too late yet!

November Playlist

I know I said last month I wasn’t going to make a playlist for Novemeber because they take a lot of work (I like the vibe to be just right) but I made a playlist for this month anyway and its all my favorite throwback songs from middle school and older. So, Brittany Spears, nsync, Christina Aguilera, Sisco, B2k. You guys know. Back when music was really fun. I’ve just been feeling really nostalgic lately. Time is moving really fast it seems. I can’t believe its already holiday season again. Every year seeing how much Sage is growing just reminds me that I’m getting older. Things are changing. I’m no longer in my early 20s and the 90s was almost 30 years ago. It honestly makes me so sad and anxious for what’s next. But I’m trying my hardest to just take it easy and reminisce without getting stuck. Celebrate my age and the things that made me happy in childhood.
